Dan Dan noodles consists of 3 processes that are all combined at the end to make your final dish. I like my dan dan noodles hot, so the items are combined when still warm. The 3 items are: noodles, sauce, and ground meat.
Noodles – buy or make egg noodles
|Peanut Butter (or chinese sesame Paste)||2 tbsp|
|Chianking Vinegar (or sherry)||3 tbsp|
|Soy Sauce||1 tbsp|
|Chili oil||1/2 cup|
|Green Onions (green parts)||6|
Chop green onions into thin slices, mix all ingredients in a bowl, set aside.
4 garlic cloves minced, 1 inch of ginger minced
1.5 lbs of ground meat (in this case we used beef)
Add peanut (or other neutral oil) to wok-like pan, cook garlic and ginger until fragrant, add meat and cook until well done.
- Noodles, top with meat, top with oil, garnish with some uncooked spring onion if desired
